Hennen's Chop Salad Dupe

I literally used to get this salad EVERY TIME I went to Hennen's, but unfortunately, they have discontinued it! I am no Chef Justin, but I think I do pretty well for having to recreate it!

Let me start by saying, Hennen's is my absolute favorite restaurant in Chattanooga. Not only is it a Chattanooga Staple, but from steak to seafood, they really outdo themselves. While I am on a Hennen's rant I will tell you some of my absolute favorite menu items:


Apps: Sweet Ginger Calamari & Jumbo Lump Crab Cake

Dinner: Soy Ginger Salmon, Prime Rib & Filet Mignon (yes sometimes I eat meat, ESPECIALLY at a restaurant I trust like Hennen's)


Anyways, back to this fabulous salad.. Hennen's made it with Arugula, Salmon ( I always asked for blackened), pearled couscous, freeze dried corn (I can never find it), grape tomatoes, walnuts or pecans (it's been so long I cannot remember), Parmesan cheese & buttermilk pesto ranch. With that said, here are the ingredients for my salad!


Blackened Salmon Chop Salad (Hennen's Dupe)

Prep Time: 10 minutes

Cook Time: 30 minutes

Yield: Serves 2


Ingredients for Salad

  • Blackened Salmon (I get mine from Whole Foods)

  • Garlic & Herb Pearled Cous Cous

  • Spinach & Arugala

  • Cherry Tomatoes

  • Corn on the Cob (If you can find freeze dried, use that!)

  • Walnuts

  • Dried Cranberries

  • Parmesan cheese (regular or dairy free)

  • Salt & pepper

Ingredients for the dressing

Directions (Cooking)

  1. Cook the couscous (directions will be on the box)

  2. After you put the couscous in, shuck the corn and cut the kernels off. Preheat a pan with oil, and cook the kernels on low heat with salt & pepper until done. Remove from heat and cover (if you have freeze dried corn, omit step).

  3. While couscous continues to cook, cook the salmon. Preheat the air fryer to 400 and cook for 10 minutes (8-9 minutes if you like it a little less done). If you don't have an air fryer and are baking it, it is recommended to cut a 12 oz salmon filet into 4 pieces and bake for 12-15 minutes on 450)

  4. Once the couscous and corn are done, let cool

  5. While you are waiting on everything to finish cooking, cut your tomatoes how you like them, and mix the dressing

Directions (Dressing)

  1. Mix the Ranch, Pesto and Truffle Hot Sauce together until you get a finished product you love. I usually start with a ranch bas, then mix in the pesto and then drop the hot sauce.

Directions (Assembly)

  1. In a salad bowl, start with spinach and arugula

  2. Put the blackened salmon on

  3. place the corn, couscous, cherry tomatoes, walnuts and dried cranberries around the salmon

  4. Top with dressing & parmesan cheese and ENJOY!!
