Vegan Honey Garlic Sriracha Tofu

with air fryer broccoli and white rice

servings 2 // 30 minutes or less

Ingredients for tofu (you can also sub chicken):

  • 14 oz extra firm tofu

  • 1 Tbsp corn starch

  • 2 tsp garlic powder

  • 1/2 tsp paprika

  • 1/2 tsp onion powder

  • 1/2 tsp salt

  • cooking spray

Ingredients for broccoli:

  • Olive Oil (about 1 Tbsp)

  • salt & pepper (to taste)

  • garlic powder (to taste)

  • onion powder (to taste)

  • red pepper flakes (to taste)

Ingredients for honey garlic sriracha sauce:

Ingredients for rice:

  • white or arborio rice (2 servings)

  • Prepare the rice as directed (this will take the longest), and break apart your broccoli into a big bowl. Season with oil and other ingredients. Cover and set aside.

  • Lay the tofu in the center of a clean thin dishtowel and gently press to remove the excess moisture. Cut the tofu into 1 x 1 inch pieces (size is SO IMPORTANT)

  • Place the squares into a small bowl. Add the cornstarch (1 Tbsp), garlic powder (2 tsp), onion powder (1/2 tsp), paprika (1/2 tsp), and salt (1/2 tsp). Toss until the tofu is completely coated.

  • Spray the basket of the air fryer and place the cubes in a single layer. Spray the tops of the tofu with the spray as well. Set the air fryer at 360F for 18 minutes. After 10 minutes, shake the basket, and return it for another 8 minutes. Cover and set aside when done.

  • While the tofu is frying, make the sauce. Combine veggie broth (3/4 cup), honey (1/3 cup), soy sauce (2 Tbsp), garlic ( 4 cloves minced), ginger (1/2 tsp), sriracha (can start with a little and add more closer to the end to taste depending on how spicy you like it). Bring to a GENTLE boil, reduce heat and let simmer, stirring often, for about 5 minutes.

  • Whisk water (1 Tbsp) and Cornstarch (1/2 Tbsp) together into a small bowl. Pour into the saucepan and simmer until sauce thickens (about 7-8 minutes)

  • While sauce finishes, air fry the broccoli. Put 1 Tbsp of water in the bottom of the air fryer. Air fry for 6 minutes on 350.

  • When sauce has thickened, set 1/2 aside (for drizzle) & add the tofu to the other half.

  • Plate the tofu, rice and broccoli. Drizzle with extra sauce and siracha (if you want to), and enjoy!!
